roasting is one of the easiest ways you can prepare vegetables. not only does it intensify the natural flavor of the vegetable, the healthy parts don't get boiled away.
with cauliflower, i cut away some of the hard, woody stem, and quarter the heads before coating with olive oil, salt & pepper. you can also mix in some fresh thyme for added flavor, but even without herbs, it's still pretty tasty. bake in a 400 degree oven for 15 min or until a fork goes through easily. for a little something extra, you can chop further and toss with some green olives.
